The thermometer on my patio just hit 95 degrees….whew. Our unusually dry, cool spring is officially over, and the oven-like heat of summer is here. Today’s no-cook, room-temperature lunch: hummus on homemade flaxseed bread, topped with baby spinach, sliced tomatoes, and sliced cucumbers.
Blessedly, no BTUs were generated in the making of this lunch…
Oh, that looks delicious. I love hummus. I love bread. I love tomatoes. This is very much a sandwich that I’d enjoy.
I can’t wait for tomatoes to be in season here. It’s already hot enough for me to not want to cook. But no toms!
