Wanna bake with me? Registration is now open for my spring 2014 baking classes, offered through the St. Charles parish schools’ Community Education program. This semester, I’m offering:
- Breadmaking for Absolute Beginners, March 13, 2014. An ideal class for teens or those who know absolutely nothing about baking with yeast. This hands-on class will teach participants about the ingredients needed to make a loaf of sandwich bread, how to knead, how to know when dough is sufficiently kneaded, and other foundation skills. Each student will leave the class with a ready-to-bake loaf to take home and bake that very evening. Cost: $25, plus a $5 supply fee.
- Buttery Brioche, March 27, 2014. Butter and egg enriched brioche dough is used for savory and sweet pastries ranging from cinnamon rolls to king cakes and stuffed buns. I will demonstrate a brioche dough using a stand mixer, and participants will work with a prepared brioche dough to make a variety of shapes and flavors.

April 10 2014(class is full).Kick the takeout pizza habit; learn to make good pizza at home using a slow-rise, no-knead technique. We will make (and eat!) several styles of pizza in class, exploring new flavor combinations and toppings. Participants will take home a mixed dough which can be refrigerated and used for several days.
