In honor of Pi Day, I give you…..chicken pot pie. With a pie crust in the freezer, it’s easy to make pot pie from leftover cooked chicken and whatever vegetables are on hand. I like a ratio of 1/3 chicken to 2/3 veggies plus garlic, onions, and herbes de provence. A little roux-thickened chicken broth ties it all together. (Maybe I should have used more roux, as the filling was a bit runny.)
