Heavy rains are in the forecast for the next few days, so I’ll probably skip Mardi Gras parades until the sun comes out. Meanwhile, to entertain myself, I have my new pasta roller and cutter attachments for my KitchenAid mixer. I’ve never made fresh pasta…but I’m looking forward to trying.
If you do make it to the Uptown New Orleans parades, keep your eyes peeled for food trucks: Taceaux Loceaux & NOLA Sandwiches (selling bahn mi) plan to hit the route.
I think you’ll love those attachments and will probably become addicted to making pasta! The nice thing about them is that, unlike the Atlas machine with the motor or other extruding-type machines, you can crank up the speed to go really fast. Don’t know if they still are, but my 20-yr old Kitchenaid attachments were made in Italy by Atlas. In the recent cold weather, we’ve loved homemade pasta rags with lamb bolognese…
Lamb bolognese sounds divine. I’m looking forward to spring & summer pastas featuring seafood & light, fresh flavors. I’m sick of heavy, cold-weather food. What I wouldn’t give for a good tomato!
We got one of those sets for a wedding present… didn’t use the cutter but the roller was so easy to use. (If you end up with a lot, the sheets freeze fine with wax paper between the layers, wrapped in a stack in foil.)
Have seen food trucks already, and that cupcake thing walking around with a cart….
The Brazilian BBQ truck is downtown, where St. Charles meets Common, from now ’til it’s over.
