Cheese toast

What to eat, when you’re hungry and can’t be bothered to cook?  Or when grocery shopping’s been deferred too long?  Or when you want simplicity, after too many complicated meals…

I eat cheese toast.  It’s less fussy than a grilled cheese sandwich; no need for a skillet or a stove–a hunk of bread meets a morsel of cheese inside the toaster oven for a few minutes, and it’s done.  Cheddar on thinly sliced sourdough (pictured), Brie on a baguette, queso fresco folded inside a warm tortilla, feta tucked inside a pita, colby on New Orleans-style french bread or some fontina melted atop a finger of focaccia, cheese toast always hits the spot.  I would have starved decades ago if not for cheese toast.
