What happened to the rest of the pineapple?

Siamese Thai’s (6601 Veterans Memorial Blvd, Suite 29, Metairie, 504.454.8752) pineapple fried rice arrives at the table in  a hollowed-out pineapple shell.

What happens to the rest of the fruit?  Look carefully at the menu:  Siamese offers fresh, made-in-house pineapple juice.  Nice.
