Layers of fatta-in-casa (made in house) italian-style dry cured meats stuffed into a soft roll make “the Gambino” sandwich a short, $12 tour through Cochon Butcher’s wares. Lightly dressed arugula and onions balance the porky heft of thinly sliced sopressatta, coppa, and salame cotto. My only disappointment: rather than the stellar bread-n-butter pickles, the sandwich came with a roasted, pickled pepper. Tasty, but in no way equal to the divine b&b pickles (at least they’re sold by the jar).
