Pork belly is all over restaurant menus these days, whether cropping up as an embellishment or starring as an entree. The current menu at Emeril’s features a salad of Niman Ranch pork belly braised in Abita Root Beer and layered with lettuces, cracklings, citrus, radishes, goat cheese, jalapenos, and chunks of caramelized yuca.
