Creme fraiche

Is lightly sweetened creme fraiche the perfect fresh-strawberry topping?  Creme fraiche’s tang is more interesting than the fluffly sweetness of whipped cream.  Except, now that I think about it, all decadence aside, ultra-rich mascarpone might just have the edge over creme fraiche.

Roadside strawberry vendors have appeared in spots along US 90, a sure sign of real spring in south Louisiana.  I’ll wait for the price per flat to drop a bit before I make jam, but I am buying the odd pint or two for snacking.
