Grilled chicken livers

P8310019LSU’s season opener kicks off Saturday at 9 pm—to fill those long, pregame hours, try out some new football snacks.  For a change of pace from hot wings or grilled sausages, why not venture into organ meats?  Trim the white, gristly bits off of chicken livers, sprinkle with a little creole seasoning, and grill ’til lightly charred (but still pink inside).  Sliding the livers onto skewers will make turning easier.  Add a little hot pepper jelly, Steen’s cane syrup for dipping, or whole-grain mustard for dipping.
