After a few days away from the office, I returned to find a whole country ham in my chair. Whee! A surprise visit from the ham fairy, who left me a RM Felts dry cured country ham. The ham perfumed my chair, so every downwind dog in Audubon Park sniffed hopefully as I strolled past on my way home.
Meanwhile, I’m trying to figure out whether I can eat this VA ham as crudo (uncooked, sliced thinly as prosciutto). I know, the USDA says I shouldn’t, but hell, they gave a peanut plant in GA a passing grade despite a nasty, recurring salmonella problem.
