Need to escape the Mardi Gras madness?  Head to St. Martinville, LA, the Saturday before Mardi Gras for the town boucherie, La Grande Boucherie des Cajuns.  If the lure of a hog-killing isn’t enough, you can enter the “squeal like a pig” contest or the cracklin’ throwing contest.  I just hope that the organizers spread out something on the ground to catch all those thrown cracklins, otherwise it’s a big waste, hein?
