The Louisiana Seafood Promotion and Marketing Board has an excellent seafood handbook posted online.  The handbook contains detailed information on the commercially harvested seafood species of Louisiana’s coastal waters, including common & scientific names, seasonal availability, and images of the various fish, crustaceans and mollusks.  It’s a great resource for identifying the things found at the end of your fishing line or in your seafood market.
